Personality:
She has a sisterly (and sometimes almost maternal) relationship towards Morgana, and a large part of Gwen's duties were simply dealing with and easing her nightmares. She also tends to help extensively in the temporary clinics set up during times of crisis, nursing the injured and providing shelter. All of this experience makes her deeply compassionate towards people in danger or pain, physical or mental, to the point that she will do everything in her power to help when such a situation presents itself. She does not like to feel useless or idle, and she understands the importance of needing people in the background to take care of the smaller details (though that doesn't deter her from putting herself on the frontline if that's what's absolutely required of her).
Gwen is, at her core, gentle and kind-hearted. She lives a happy, simplistic life, and she tends to be optimistic about the future despite her own personal trauma. That optimism isn't an indicator of any sort of naivete, though -- she knows there is evil and injustice in the world (and has, in fact, seen it for herself) -- just that she has faith that the future has the potential to be better than the present. This outlook feeds her strong opinions on what is right and just, and is often the basis for her impassioned outbursts (when she has them).
In general, though, she knows what is appropriate and what is not. She knows when (and to whom) it is acceptable to speak her mind, and she's usually good at drawing the line. But Gwen tends to have a lot on her mind, and problems arise when she starts to feel comfortable and forgets where she is and who she's talking to. That is to say, the more relaxed she is (or the more detached she feels from a court environment), the less likely she is to think before she speaks, which can lead to a lot of rambling, backtracking, and apologizing.
She is steadfast and opinionated, and as time has progressed she has become more accustomed to expressing those opinions. It's when she does start to express them in a manner a little more sophisticated than emotional outbursts that we see a calmer, wiser, and more regal side of Gwen.
Extra:
Practically speaking, Gwen is just your average human, no special powers or magic to speak of.
That said, she's the maid to a very noble lady of the royal court, and the daughter of a blacksmith. She is (allegedly) the best seamstress in Camelot, and presumably does a variety of different chores around the castle, so it's safe to assume she's a fairly good cook as well. She also seems to have some knowledge of flowers/flower arranging, since that seems to be... 90% of the work she's shown doing.
On the other side of that coin, she has experience in making and maintaining armor and weaponry, from growing up with her father. She also seems to know her way around a sword -- or the basics, at the very least. She obviously can't be expected to duel with the best of them, but she can defend herself if necessary.

She doesn't seem to have a complete grasp on how they work, because she's speaking a smidgen louder than is really necessary. It's forgivable, though, because she's clearly a bit panicked about using this obviously magical (AND SO NOT KOSHER) object, but she doesn't know where she is and she's really out of options.]
-- Ah, excuse me? Hello? Hello, can... can anyone hear me? Ohhh, this is silly, I can't believe I even thought it would--... but--.... [there's a small noise of frustration, and then she seems to steel herself]
If anyone can hear me, please, can you tell me what's happened? I'm afraid I don't... exactly know where I am, and I must get back to the castle as soon as possible. I've tried asking the people here, but they--... well, honestly, they don't seem to be that friendly.
[there's another, awkward beat, and she takes a breath.] Please.

She thinks maybe she's been a morning person for all the reasons Morgana can't be one.
She stays late most nights; sometimes she stays the entire night, sleeping in the chair by the fireplace with the extra duvet cover as a blanket. Those are nights when it takes Morgana a little bit longer to fall asleep, nights when Gwen suspects there's something bubbling beneath the surface of her lady's subconscious, waiting to wake her violent and screaming in the early hours of the morning.
It's not an inconvenience, in any sense of the word. There are still some nights where she can't handle the emptiness of her own home.
And she's usually right to stay, anyway.
It had happened again the night before. Morgana hadn't even bolted upright in bed; her eyes had just opened, and in the next moment she was screaming. Gwen had been forced to pull her into her arms and hold her until the thrashing stopped, and then held her longer until the tremors faded, too.
"Shhh. Shhh, you're alright." She could feel warm tears on the shoulder of her dress, and her heart broke a little. "Everything's all right now."
Morgana had gone back to sleep, and Gwen had stayed. Just in case. But the nightmares hadn't woken her again.
And now she's setting Morgana's breakfast at the end of the bed, feeling warm and awake as the sun peeks through the window and drops speckles of light across her knuckles. She'd added some extra fruit this morning, the kind she knows Morgana likes.
She stirs a little in her sleep, pressing her cheek closer to the pillow, and Gwen knows it's the first time she's slept deeply in days. She can't bring herself to wake her.
There's laundry to be done, she decides.
